Bridgewater rushed for a touchdown and then threw for three touchdowns to three different receivers on the day, completing 20-of-30 passes for 229 yards, but a PAT failure late in the third quarter came back to be pivotal for the Saints.
The Saints (6-4) received 157 rushing yards from Matt Burgess, who went over 1,000 yards rushing on the season.
As a team, the Saints outgained the Mountaineers 393-340 total yards.
EOU quarterback Kai Quinn threw for 290 yards and two scores, and running back Kaler Moore added two more to lead the Mountaineers.
At 6-4, the Saints posted their first winning season since 2014.
