Quote from Coach Van Diest: “Elliot moved from wide receiver to tight end, and found a home at defensive tackle. He has gotten up to 260 pounds and had an outstanding spring football. We are counting on him to be a key player for us this fall.”

2014: Appeared in all 12 games as a backup tight end and on special teams... did not record any stats... named Academic All-Conference

2013: Moved to tight-end in the spring... contributed on scout team.

2012: Redshirted and contributed on scout team.

High School:
Elliott was a three-year starter and four year letterman at Judge Memorial Catholic High School in Salt Lake City, Utah... named to the Deseret News All-State Team as well as the Salt Lake Tribune All-Region 10 team... was a two-year letterman in basketball... four-year Honor Roll member.
